Ingredients you will need:
3.5 us fl oz of rice (preferably double carolina or risotto rice)
34 us fl oz of milk
Cinnamon (stick)
Lemon peel
Step by step
We are going to start by putting in a pot our rice together with the liter of milk. This amount is necessary for the rice to be very creamy.
Then we are going to cut some pieces of lemon peel (keep in mind to wash the lemon well to remove all the dirt that the peel may have) and we are going to add them to the pot.
We are also going to add to the rice pudding a stick of cinnamon. If we can get it in stick, much better since in this instance we are going to use it to aromatize during the cooking of the rice.
This mixture, before putting it on the fire, we are going to let it rest between 30 and 60 minutes. Know that a rested rice pudding is the secret of success! This time serves to aromatize, and soak the rice well with the flavors of cinnamon and lemon. So when we cook it, it will be much tastier.
Now, after this time, we go to the fire. We leave everything inside and we will cover it until it is close to boiling. It is important to control it.
Once it is close to boiling, uncover and start stirring carefully. You can leave it alone for a while, but the ideal is to stir as much as possible.
The moment to add Spiced Sugar by Nativo Spices is when you taste the rice and feel that it is al dente. Keep stirring the rice with milk until the milk begins to evaporate and the sugar begins to thicken the mixture.
When we see that the rice pudding is cooked, we turn off the heat, remove the pieces of cinnamon and lemon peel, and let it rest for a few minutes in the pot while we beat it a little more intensely to finish evaporating the remaining liquid and make it even creamier.
Then we take it to the refrigerator for 20 or 30 minutes and that's it! Just serve it!
We recommend sprinkling a little cinnamon powder on top to give it the magic touch.
