Deliciously Irresistible Croquetas with Pampas Herbs

Here are some incredible croquettes that you can use both as an appetizer and as a dish that satisfies your appetite. The special touch of course is from Nativo Spices with Pampas Herbs. INGREDIENTS:

Ingredients (4 Portions):

  • 4 cups (680 g) peeled and cubed Yukon Gold potatoes

  • 2 tbsp (30 ml) olive oil

  • 1 egg

Filling:

  • 1 onion, chopped

  • 1 tbsp olive oil

  • 3/4 lb loose Italian sausage meat

  • 1/2 cup water or wine

  • 2 tbsp tomato paste

  • 1 tsp smoked paprika

  • 1 tbsp Pampas Herbs

  • 3 eggs

  • 1 cup bread crumbs

  • Vegetable oil, for frying

Method:

  1. Peel the potatoes and dice them. 

  2. In a large pot, cover the diced potatoes with cold water and season with salt. Bring to a boil and simmer for 20 minutes or until tender and drain.

  3.  Using a potato masher, purée the potatoes with the oil. Let cool slightly, then add the egg, stirring quickly so that it does not cook too fast and become chunky. Cover and let cool.

 Filling:

  • Meanwhile, in a skillet over high heat, brown and soften the onion in the oil. Add the sausage meat and cook, breaking it up with a wooden spoon as it browns. Add the water (or wine), tomato paste and Pampas Herbs. Simmer until almost dry, about 5 minutes. Let cool.

Assembly:

  • Line a baking sheet with paper towels.

  • With your hands, shape the potato mixture into patties 1/2 inch thick using about ¼ cup of the mixture for each patty. Place 1 tbsp of the filling in the center, then

    pinch to seal the potato mixture around the meat. Shape into balls and set aside on a large plate.

  • In a shallow dish, lightly beat the eggs. Place the bread crumbs in another dish. Dip the potato balls into the egg and shake gently to remove any excess. Dredge in the bread crumbs. Dip a second time in the egg and the bread crumbs.

  • Preheat the oil in a deep dryer to 350°F

  • Working in batches, fry several balls at a time for 2 minutes or until golden brown. Watch out for splattering. Drain on the paper towels.
