Empanada Sanjuanina

This time we will teach you how to cook the typical empanadas from San Juan. The particularity of these empanadas is that they are different from their peers, and make the province of San Juan known for its ingredients.

Ingredients for the dough

  • 17 oz of flour

  • 5 oz of lard (pork fat is best, but any works)

  • 8 oz of hot water

  • 0.5 oz salt

Stuffing:

Method:

  1. For the dough, make a brine with the salt and water by boiling it until the salt dissolves. 

  2. Add the flour to a large bowl, and move the flour to the sides of the bowl, creating an empty space in the middle. Add the lard, which should be melted, and the hot brine to the center.

  3. Knead until you have achieved a smooth and tender dough that does not stick to your hands. Add water or flour as needed. 

  4. Rolling the dough until it is about a 1/4 thick. And cut discs rather wide, the size of the palm of a hand. Set aside.

  5. For the picadillo or stuffing, melt the fat in the pan for cooking. Cut the onion in julienne and sauté until transparent. Add the ground beef and let it cook. Add salt and then Heritage Blend.

  6. Let cool completely. Chop the hard-boiled eggs and olives and set aside.

  7. Take the discs, fill them with the minced meat and place a tablespoon of the mix of hard eggs and olives made in the previous step.

  8. Place the empanadas on a sheet pan and Bake them at 420°f for 15 to 20 minutes.
