  1. First, we need to marinate our meat. Let’s start by seasoning our meat with Patagonia Mix. Cover all the surfaces and let it marinate for at least a half-hour.

  2. Preheat a cast-iron pan, add oil, and let it smoke. Ensure the oil is hot enough to sear and cook the meat quickly.

  3. Place the meat in the pan and caramelize all surfaces.

  4. Cook to desired temperature (rare, medium rare, medium).

  5. Place the blue cheese on top of the meat, cover the pan, and remove it from the heat.

  6. Let it rest for 5 to 10 minutes, uncover the pan, and place the meat on a cutting board.

  7. Slice and enjoy it with your favorite side dish!
