Preparation
Preparation time: 20 minutes.
To start, chop the onion, garlic, and peppers (if fresh, not canned) in very small cubes. Cook them in a paella pan that is at least 16 inches wide, with a little bit of oil until the vegetables begin to caramelize, about 10 minutes more or less.
Slice the tomatoes into cubes and remove any excess seeds.
Soak the rice in water until it is ready to add to the paella. This will help it absorb flavor evenly.
Cut the squid into 1/2in. thick pieces and add them to the paella, cook them for about 5 minutes. Add the wine and let boil.
Cook everything over low heat for about 20 minutes. Drain the water from the rice and discard the water, and add the rice into the paella plan. Add the vegetable stock and the saffron.
Mix everything with the help of a wooden spoon for about one minute, stop mixing, and cook for 10 minutes. After 10 minutes, add the seafood and cook for 5 more minutes. Season with a little chili and the spoonfuls of Spice The Sea by Nativo Spices.
Add the peas, roasted peppers (if canned), and the parsley.
Turn off the heat and let the paella rest for a few minutes before serving. You can decorate it with some lemon slices in the final plating.
