Roasted Prime Rib

Ingredients:
Prime Rib 1 lb. per person
Method:
Remove the meat from the fridge, remove any exes of fat.
Marinate with Chimichurri for a least one hour at room temperature.
Re-heat the oven at 450*F. Place the meat in the oven and cook for a half-hour or until golden brown.
Now low down the temperature to 360*F and cook the meat until the temperature you like.
We recommend half an hour per pound at 360*F. Let it rest for 15 minutes and slice it.
Make more Chimichurri sauce for plating.
