Butternut Squash Soup with Patagonia Mix
In winter there are just a few vegetables to cook, but they are some of the most delicious options all year. One of my favorite dishes to eat in winter is soup to warm up first then the entree, but also you can make a soup so rich that you do not need another dish. Butternut Squash Soup with Patagonia Mix is the perfect meal for a cozy evening at home.

Ingredients:
Butternut Squash 2 lb (Peeled and cut into cubes)
Vegetable Stock 2 qts
Cream 1 cup
Butter 1 tbsp
Presentation (Optional)
Method:
In a big pot, place the squash and cover it up with the stock
Bring the stock to medium heat and let it cook for 25 to 30 minutes. If you cut the squash in big cubes, you will need more time. Take a knife and cut one cube to see if it is fully cooked. We want it to feel like we are cutting through room temperature butter. Keep cooking if needed.
Remove the pot from the heat and let it set for 5 minutes. Prepare the blender and another pot with a strainer to prevent big pieces from going into the soup.
Blend the soup with some stock and finish it with the Patagonia Mix, cream, and butter, blending all together at high speed.
Pass it through the strainer and serve.
