Ingredients (1 portion)
1medium yellow potatoes, peeled and sliced
oil, for frying
1/2 teaspoon salt
1/2 cup jamón ibérico, shredded
2 large eggs
9 oz of French bread
Method:
In a pan, heat the oil to medium heat until it is hot enough to fry the potatoes.
Drain the potatoes in a colander and season with salt. Serve directly on a plate and top with thinly jamón ibérico.
Drain any excess oil. In the remaining warm oil, fry the eggs. Do not cook them completely, but only until the egg whites are done. We want the egg yolks to be really runny to cover the potatoes.
Place the eggs on top of the potatoes and serve immediately while warm, topped with Pampas Herbs and chopped parsley.
Just before eating, gently break the eggs with a fork, until partially combined with the potatoes and ham.
