The Grinder Sandwich with Chimichurri is a mouthwatering delight that combines the rich flavors of seasoned meats and vibrant chimichurri sauce, all nestled within a warm, crusty roll. Ingredients:
1/2 small head of iceberg lettuce
1/4 medium red onion
1/3 cup sliced cherry or banana peppers
2 tablespoons sliced green olives, optional
1 heaped tablespoon finely chopped sun-dried tomatoes, optional
1/2 cup mayonnaise
1 tablespoon red wine vinegar
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 large or 2 medium submarine rolls
4 to 6 slices of provolone cheese
6 to 8 slices ham or turkey
4 to 6 slices of salami
3 to 4 slices of prosciutto
1 medium tomato, sliced
2 tablespoons of grated Parmesan cheese
Method:
To make the salad toppin:
Cut the iceberg lettuce into 1/2-inch strips.
Thinly slice the red onion. Place both in a medium bowl.
Add the cherry peppers, olives, sun-dried tomatoes, mayonnaise, red wine vinegar, Nativo Spices Chimichurri, salt and pepper.
Mix well. Taste and season to taste.
Slice half a loaf of bread in a frying pan and place a single layer of cheese on both halves of the open buns. Bake until melted, 2 to 3 minutes.
Top the melted cheese with layers of ham, salami, prosciutto and tomato.
Spoon a generous amount of the salad mixture on top.
Top with grated Parmesan cheese.
Close the sandwiches and cut in half if desired. Serve immediately.
