INGREDIENTS:
For The Chicken Brine:
1 Whole chicken, spatchcocked, and cut in half
3 Cups buttermilk
6 Sprigs fresh rosemary
2 tbsp kosher salt
1 tbsp black pepper
For The Rosemary Infused Honey & Maple Syrup:
1/2 cup real maple syrup
1/4 cup honey
3 sprigs fresh rosemary
1 tsp Rosemary Sea Salt by Nativo Spices
INSTRUCTIONS:
Brining The Chicken:
Place all ingredients into a large Zip Loc storage bag and mix well.
Add chicken, remove all air from the bag and seal the bag.
Refrigerate for 12-24 hours
Remove chicken from brining bag and rinse completely.
Place the chicken on a baking rack and baking pan and let air dry for 12-24 hours (this helps the skin get crispy later on).
Making the Rosemary Infused Honey & Maple Syrup:
Place all ingredients into a medium saucepot and let it come to a low simmer for 10 minutes.
Remove rosemary sprigs.
Roasting the Brined Chicken:
Preheat your oven to 375 degrees.
Place the two halves of the chicken onto a parchment-lined baking sheet.
Coat the chicken skin with duck fat spray (or olive oil).
Grind roughly 1 TBS of the Nativo Rosemary Sea Salt over the chicken so you have a light coating (the duck fat/olive oil will make it stick nicely).
Place the chicken into your pre-heated oven.
During the last 10-15 minutes of roasting, remove the chicken from the oven and baste it with the Rosemary infused honey & maple syrup, then quickly return to the oven. Repeat this process 3-4 times as the chicken reaches a beautiful golden color.
Remove chicken from the oven when the internal temperature reaches 165 degrees.
Serve with the Rosemary Biscuits, roasted potatoes, and grilled broccolini (or other favorite vegetables).
