Ingredients:

Method:

  1. Preheat the oven to 325* F. Place a large, deep pan (like a big casserole dish) in the oven with water. Leave an inch or two of space at the top so there is enough room to use it as a water bath later.

  2. Add the Spiced Sugar into a small sauce pan with roughly 1-2 tablespoons of water. The water should be barely enough to get the sugar wet.

  3. Turn on the stove to medium heat, slowly moving the pot so that the sugar and water combine to create a caramel.

  4. Cook for just a few minutes until the sugar begins to become dark and reduce. Remove quickly before it overcooks and burns, as it continues to cook after it’s removed from the heat.

  5. Quickly pour it into the container you will bake the flan in, moving the container so that the caramel coats all the interior surface. Set aside and let harden.

  6. In a large bowl, mix the eggs with the sugar, the vanilla essence, and the milk.

  7. Strain the mixture into the mold.

  8. Gently place the container with the flan into the water bath.

  9. Bake for 45 minutes and then check on the flan to see if it has set. You can lightly jiggle the container to see if it is still liquidy in the middle.

  10. When you see that the flan has cooked fully and set in the middle, carefully remove from the oven and the water bath. This may take an hour to an hour and 15 minutes. Let it cool to room temperature so that it does not cool too quickly and split. After a few hours, or when the pan is no longer hot to the touch, place it in the refrigerator to continue cooling.

  11. Let cool overnight if possible.

  12. When you’re ready to serve the flan, take a butter knife and carefully move it around the edge of the flan, separating the edge from the container.

  13. Place a plate or platter over the container, and quickly flip it upside down. Gently remove the container from the flan, leaving the flan with its caramel covered surface on the plate.

  14. Garnish with dulce de leche, berries, or whipped cream. Enjoy!
