Panna Cotta & Spiced Sugar

Ingredients you will need:
4 oz of Spiced Sugar by Nativo Spices (up to 5 oz if you like it sweeter)
1 quart of heavy cream
¾ cup milk
1 cinnamon stick and lemon zest (optional) or a teaspoon of vanilla extract for flavoring
1 sachet of neutral gelatine powder (0.3 oz) or 6 neutral gelatine sheets
Apples, peaches, or pears in compote
Step by step:
Heat the cream with Spiced Sugar, cinnamon and lemon (or vanilla). Remove from the heat when it is about to boil.
If you use gelatine sheets, you will have to hydrate them in cold water for about 10 minutes.
Heat the milk in the microwave and dissolve the gelatine in the hot milk. Add it to the still-hot cream and mix well. Let cool.
Strain the mixture well. Once strained we can use the mixer to integrate it well.
Cut the fruit compote into squares, if it is not already in the desired size and shape, and put it in the base of the dessert in a cake pan or individual molds.
Put the mixture into the molds and chill it in the refrigerator for at least 3 hours approximately until it is well set.
