Patagonia Mix - Aioli
There are so many great recipes that call for mayonnaise, and I love nothing more than being able to create my own, flavorful, and high quality mayos and aiolis! Here is a perfect and simple sauce for your potatoes, seafood, sandwiches, or meats.

Ingredients:
Eggs 2ea
Oil 2-4 cups (depending on the thickness you want)
Lemon juice 1 ea
Stick Blender Method:
In a bowl, add the eggs, Patagonia Mix and the water, and the oil.
With a stick blender, mix all the ingredients fast. Add the lemon juice and enjoy.
Blender Method:
Add all the ingredients in the blender, except the oil.
Start to mix at medium speed and add the oil slowly.
When it gets to the consistency you like, stop the blender, and put the aioli in a jar.
Enjoy with your favorite food! This aioli is a great dipping sauce or a great addition to any recipe that calls for mayo. When stored properly in the refrigerator, this aioli can last for several weeks.
