Shrimp Bisque
A delicious bisque (or chowder, for that matter) is something that really pleases me. This incredible shrimp bisque is velvety smooth with a deep, rich shrimp flavor.

Ingredients:
1 1/2 lbs large Shrimp (shells on)
3 TBS Extra Virgin Olive Oil
3 TBS Butter
Shrimp Shells (from your shrimp above)
2 TBS Tomato Paste
3-4 fresh thyme sprigs
2 Leeks, washed, trimmed, and roughly chopped
2 Shallots, peeled and quartered
2 Celery stalks, roughly chopped
2 Carrots, peeled and roughly chopped
2 Bay Leaves
1/3 cup Sherry
3 TBS Flour
3 cups Seafood Stock
4 cups Heavy Cream
Chopped Chives, for garnish
Method:
In a large pot under medium heat, add olive oil and butter.
Add your shrimp shells, tomato paste, thyme, Nativo seasoning, leeks, shallots, celery, carrots, and bay leaves.
Cook for roughly 10 minutes.
Remove the pot from the heat and add the sherry.
Return the pot to heat and cook for 1-2 minutes.
Add flour, stir, and cook for 3-4 minutes.
Add the seafood stock and the heavy cream.
Bring just to a boil, then reduce and simmer for 30 minutes.
While that's simmering, skewer some shrimp (as many as you need for garnish) and dust with add'l Nativo Spice the Sea Seasoning.
Cook on a hot grill for 2 minutes per side and set aside.
Remove the stock from the stove and pour it through a fine-mesh strainer.
Return the bisque to the stove and add the remainder of your raw shrimp.
Cook for 3 minutes, until the shrimp are just cooked through.
Ladle into bowls and garnish with chopped chives, a dusting of add'l Nativo Spice the Sea seasoning, and 2 of the grilled shrimp.
