  • 1 1/2 lbs large Shrimp (shells on)

  • 3 TBS Extra Virgin Olive Oil

  • 3 TBS Butter

  • Shrimp Shells (from your shrimp above)

  • 2 TBS Tomato Paste

  • 3-4 fresh thyme sprigs

  • 2 Leeks, washed, trimmed, and roughly chopped

  • 2 Shallots, peeled and quartered

  • 2 Celery stalks, roughly chopped

  • 2 Carrots, peeled and roughly chopped

  • 2 Bay Leaves

  • 1/3 cup Sherry

  • 3 TBS Flour

  • 3 cups Seafood Stock

  • 4 cups Heavy Cream

  • Chopped Chives, for garnish

Method:

  • In a large pot under medium heat, add olive oil and butter.

  • Add your shrimp shells, tomato paste, thyme, Nativo seasoning, leeks, shallots, celery, carrots, and bay leaves.

  • Cook for roughly 10 minutes.

  • Remove the pot from the heat and add the sherry.

  • Return the pot to heat and cook for 1-2 minutes.

  • Add flour, stir, and cook for 3-4 minutes.

  • Add the seafood stock and the heavy cream.

  • Bring just to a boil, then reduce and simmer for 30 minutes.

  • While that's simmering, skewer some shrimp (as many as you need for garnish) and dust with add'l Nativo Spice the Sea Seasoning.

  • Cook on a hot grill for 2 minutes per side and set aside.

  • Remove the stock from the stove and pour it through a fine-mesh strainer.

  • Return the bisque to the stove and add the remainder of your raw shrimp.

  • Cook for 3 minutes, until the shrimp are just cooked through.

  • Ladle into bowls and garnish with chopped chives, a dusting of add'l Nativo Spice the Sea seasoning, and 2 of the grilled shrimp.
