Spicy Chicken and rice with Spice the Sea

Ingredients

  • Butter, 1 tablespoon

  • Chicken breast cut into cubes

  • Onion, pepper and carrots (quantity to taste)

  • 2 or 3 tablespoon of Spice the Sea

  • Vegetable broth (1 or 2 ladles)

  • Rice, 1 cup

  • Celery (quantity to taste)

  • Green bell peppers (quantity to taste)

  • Tomato sauce (optional)

Method:

  1. In a large pot, melt the butter and add the chicken cubes to brown them on all sides. Remove the chicken and set aside.

  2. In the same pot, cook the onion, carrot, green peppers and celery over medium heat, stirring occasionally, until soft.

  3. Sprinkle some Spice the Sea over the vegetables and add some vegetable broth, along with a few bay leaves. Bring to a boil and then lower the heat to simmer.

  4. Add the chicken back to the pot and stir in the rice and more broth, enough to cover everything. Cover the pot and cook until the rice is tender and the chicken is cooked through, about 20 minutes.

  5. If you like, you can add some tomato sauce to the pot for extra flavor and color.

  6. Enjoy your spicy chicken and rice with a seafood twist!
