Asado Stew with Heritage Blend
As you may already know, “Asado,” or Argentine-style Barbeque, is very common throughout the entire country, especially in the summer. If you have an “asador” (barbecuer) who loves a lot of variety on the grill, like me, there is a good possibility you will have some leftovers! Here is a really good way to turn those asado leftovers into a new dish - asado stew!

Ingredients:
Left Over Asado 1 lb
Olive oil 2 tbsps
Onion (cut in cubes) 1 ea
Garlic (chopped) 2ea
Potatoes (cut in cubes) 2 ea.
Carrots (cut in coins) 4 ea
Celery (chopped) 4 stalks
Vegetable Stock 1Qt
Water 1 Qt
(you can add any other vegetables available)
Method:
Let’s preheat a pot, and add the oil, onion, and garlic. Caramelize these ingredients and add Heritage Blend spices (this is called sofrito) to the base of the flavor.
Add the Asado cut-in cubes into the pot, cook for 5 minutes, and add the rest of the vegetables. Cover them with stock and water. Cook all the ingredients together for 30 minutes or until the vegetables are cooked.
Adjust the salt and the spices as needed.
Serve with some fresh herbs! In this case, I have cilantro, but any herb works well.
