Grilled Chicken

 
 
 

One of my youngest memories is having grilled Asado at home with some delicious salad. For a quit some time was one of my favorites plates and I believe any kid favorite too. Here is my recipe.

Method:

  • Start your fire.

  • Take the Chicken, and cut the excess of fat. Remove the end of the wings and cut the chicken in half from the legs to the ribs.

  • In a cup make a mix with Pampas Herbs and oil.

  • Marinate the chicken with the mix until the charcoal is ready to cook.

  • Place your hand on top of the grill and cont until 6 or 7 seconds. Place the chicken on the grill bones down first. This way you are cooking the bones first then the bones will cook the meat.

  • When the bones are brown and hot (around 25 minutes), squeeze some lemon juice on top. Turn the chicken skin down for another 25 minutes, and add more lemon juice.

  • The lemon juice will caramelize and make a delicious flavor and perfume for your chicken.

  • Here is the tricky part, the legs will be cook or close but the breast needs more time around 10 more minutes. So take the legs and place the legs on top of the breast.

  • Make sure that is a complete cook before serving with a thermometer 180* F. Add more lemon juice and portion the chicken and serve really hot.
