Empanadas Catamarqueñas

Ingredients for the dough:
35 oz of flour
9 oz pork fat
1 cup of warm water
1 teaspoon salt
Ingredients for the stuffing:
2 tablespoons of Heritage Blend by Nativo Spices or 2 tablespoons of ground chili
Salt and pepper to taste
36 oz of meat cut with a knife into small cubes (preferably a beef roast or flank)
3 large onions
2 medium potatoes or 1 large
3 red bell peppers
2 hard-boiled eggs
1 cup of oil
1 minced garlic
Cumin to taste
Green olives and seedless raisins (optional)
Preparation of the dough:
Place the flour in a large container and make a well in the center.
Add the melted fat and salt. Mix everything with your hands.
Add the warm water little by little while kneading until you get a homogeneous dough.
Let the dough rest for half an hour.
Preparation of the filling:
Peel and chop the onions, peppers, and potatoes into small cubes.
Heat the oil in a skillet and add the onions and peppers.
Cook over medium heat until golden.
Add the minced meat and the potatoes and cook until golden.
Cook for a few more minutes and finally incorporate the green olives and raisins if desired.
Assembly of the empanadas:
Stretch the dough with a rolling pin until it is about 1/8 in thick and cut it into circles about 5-6in diameter.
Place a tablespoon of the filling in the center of each circle of dough. Then close the empanada in a half-moon shape and press the edges with a fork.
Place the empanadas in a previously oiled baking dish.
Bake at 350°F for about 20-25 minutes or until golden.
